Healthier Chocolate Oatmeal Cookies.....

I will be honest, a no-bake chocolate cookie that can be ready in under 30 minutes is right up my alley. So when Crystal had this recipe off her blog, I could not resist.  I did make some tweaks because I wanted to use up all my cooked quinoa and more of a chocolate flavor.  Wild Regan help me mix things up then licked the big spoon. Can you tell she liked it?  Best part no raw egg which means she could finally lick the spoon of a cookie recipe.

Yep, I ate one.  A girl needs her chocolate on long days alone with 3 kids and lots of rain.



Healthier Chocolate Oatmeal No Bake Cookies
  • 1/2 cup honey
  • 1/4 cup coconut oil - gotta love it!
  • 4 1/2 tablespoons cocoa powder
  • 1/2 cup natural peanut butter
  • 1 teaspoon vanilla
  • 1/2 cup shredded coconut
  • 3/4 cup cooked quinoa
  • 1/2 cup oatmeal
Boil honey, coconut oil and coca.  Simmer for 3 minutes.  In meantime combine remaining ingredients.  Mix liquid and dry ingredients together and dollop onto foil lined cookie sheet.  

Refrigerate or freeze until set, which is about 15 minutes. Store in an airtight container in the refrigerator or freezer.

Makes about a dozen, based upon how big you make the cookies.

  1. Yum! It is fun when the kids can lick the spoon like we used to when we were little! Most of the time I don't let them because of the eggs. These look delicious!
