Sandwich Skinnies/Low Carb Sandwich Bread Receipe

Have you gone shopping recently saw the "skinny" sandwich rolls? If not, the buns are half the size of a traditional bun. Think a flattened hamburger roll.  My kids love these rolls because there is little bread and more spaces for their cheese and meat.  After working my traditional whole wheat roll recipe, this is what I came up with as a winner.

Homemade Sandwich Skinnies for a Bread Maker
1 1/4 cups warm water
1 tsp salt1 Tbsp flax seed or 1 beaten egg
2 Tbsp olive oil
2 cups whole wheat flour
1 cup rye flour
2 Tbsp rolled oats/old fashioned or instant.  
1/4 cup sugar
1 pkg (2 1/4 tsp) yeast

Add the ingredients to your bread maker with the yeast last.  Set for the dough cycle.  When the cycle is done, pull out the dough and divided into 16 equal portions that form a ball. You might need some flour if extra sticky thanks to humidity. Flatten each ball and place on the greased/parchment lined baking sheet.

Preheat oven to 350 degrees while the buns rest for 30 minutes. If want the pockmark look, poke the bun with a fork. Bake for 12-15 minutes. Cool before slicing.  

I usually slice each bun and toss into the freezer.  My oldest makes her lunch the night before so she grabs a roll, adds her sandwich goodies and places her entire lunch in the refrigerator overnight. The next day her meal is perfectly dethawed by lunch time.
